Christmas Mug Cake Recipe – Quick, Easy & Festive

Christmas is one of the busiest times of the year and a quick Christmas mug cake can make a nice indulgent treat in this season.

Ingredients

1 tablespoon of soft butter

Z

1 tablespoon of Brandy (optional)

Z

5 tablespoons of mixed dried fruit

Z

1 egg, beaten

Z

3 tablespoons dark brown sugar

Z

1/2 teaspoon mixed spice

Z

1/2 teaspoon ground cinnamon

Z

1 teaspoon vanilla extract

Z

1 tablespoon self-raising flour

Z

Pinch of salt

Z

1 tablespoon glacé cherries, halved

Z

1 tablespoon candied peel

Decoration

Z

75g Icing Sugar

Z

1 tablespoon water

Z

Sprinkles

Method

1.

Mix butter, brandy and dried fruit in a mug and microwave for 10 seconds to melt

2.

Add the egg, sugar, spices and vanilla and beat with a fork to combine

3.

Fold in flour, salt, glacé cherries and candied peel.

4.

Microwave for 3 minutes (800W). Then leave to cool until the cake comes away from edges, at which point transfer your Christmas Mug Cake to a plate to cool completely.

5.

In a bowl gradually add the water to the icing sugar until at a suitable thickness to spread over the cake. When the cake has cooled, apply the icing and add any sprinkles or other decoration.
